Garlic Lemon Pepper Dove


Quick, simple, and Tasty! Three things that are great for cooking at home during the week. Since the first dove season is so short in California, I usually don’t get to keep it on hand long or serve a crowd. So with a batch of dove I decided it might be fun to make an appetizer that could double as a meal in a pinch. This also works great for rock dove or even chicken. If you enjoy garlic, lemon and a bit of heat, this is a good one for you!



Prep Time: 5 Minutes    Cook Time: 6 Minutes    Serving size: 1-2

- 1 lbs Dove Meat (8-10 birds)

- 4 Cloves Garlic

- 3 Jalapenos (less if you prefer to lighten the heat)

- 1-2T Lemon Pepper

- Flour

- 3T Avocado Oil + enough to coat a skillet

- Basil Leaves


Remove the dove from the refrigerator pat dry with a paper towel. add flour to a container and dredge the meat. 


In a separate seal-able container add 3T Avocado oil and add Lemon pepper to the oil until it has a consistency similar to wet sand (1-2T). Set aside.

Slice jalapeno into rounds and mince garlic

In a skillet, add enough avocado oil to coat the bottom of the pan and heat on medium high. Once the skillet begins to smoke, Add Jalapenos, garlic and dove meat and cook for 3-5 minutes, stirring occasionally.

Keeping the stove on, remove the dove, jalapeno slices and garlic from the skillet and add it to the lemon pepper mix and seal. Shake well to coat. 

Add basil leaves to the skillet and flash fry them for 10-30 seconds until crisp.

Plate your meat, and basil leaves and enjoy!

*Tip: Avocado oil is a great oil for a high temperature flash sear. Having a smoking point around 500 Degrees, I find this oil to be great to add an extra crispy exterior while not overcooking the interior. I also find the oil flavor to be very light and smooth in comparison to other oils.
