Goose Asada :: Loaded Asada Fries


Whether using it for tacos, burritos or the pictured loaded goose fries, asada is a great way to cook up some goose. Add a little Mexican influence to your food and you'll never be disappointed!


Prep time: 10 Min    Rest Time:    1-24 hrs    Cook Time: 6 Min    Serving Size: 2-4

- 1 Goose breast

- 1t Chili powder

- 1/2t Smoked paprika

- 1t salt

- 1/2t Pepper

- 1t Oregano

- 4 Garlic cloves, minced

- 1/2C Orange juice

- 1/4C Lime juice

- 1 Handful Cilantro leaves


Double Butterfly your goose breast so it can open like a brochure. Pound the meat until it is about a 1/4" thick. Place the meat into a sealable container or zip seal bag and add the rest of the ingredients. Marinade for at least an hour up to 24 hours.

Preheat barbeque on high heat, thoroughly clean and lightly oil the surface to prevent the meat from sticking. Sear the meat for about 3 minutes on one side, flip, and 2 minutes on the other. Internal temp should be at about 130. Remove from heat and cover for 5-10 minutes before slicing.

Pictured above the goose asada was combined with bacon, french fries, rustic Mexican cheese, charred jalapenos, black beans, salsa (recipe here), guacamole (recipe here), and a squeeze of lime. Enjoy!
