Quail Breakfast Burritos

A wild and filling breakfast burrito filled with eggs, quail, bacon and salsa. very big and extra filling!

Recipe:

Prep Time: 10 min.    Cook Time: 15 min.    Serving size: 2

- 6-8 Quail, Breasted

- 1 Avocado

- 6 Eggs

- 4 Strips bacon

-1/2C Mexican cheese

- 1t Cracked pepper

- 1/4t salt

- 3 Cloves garlic

- 2 Extra Large Flour Tortillas

- 1/4C Salsa – Recipe Here

 

Cut bacon into small cubes and set aside. Pat quail breast dry and Cut into small cubes.  In a bowl combined quail with minced garlic, cracked pepper and salt.

Set a large skillet to medium high. Add bacon and fry until crispy. Remove bacon and half of the bacon grease.

Add quail to the skillet and fry for 3-5 minutes stirring occasionally. Remove quail from skillet.

Add remaining bacon grease to the skillet. Scramble eggs and add to skillet. Add 1/4C of cheese and all bacon into eggs. Cook until eggs are no longer runny. Remove eggs from skillet.

Place the tortillas in the skillet one at a time and fill with half the eggs, quail, cheese, avocado and salsa. Fold in tortilla on itself and brown the sides. Enjoy!
